Wolfgang Puck's Focaccia Recipe

Ingredients
  • 1/2 c extra virgin olive oil .
  • fresh ground black pepper, for topping .
  • 1 1/2 lbs bread flour .
  • 14 oz water .
  • fresh thyme leaves, minced, for topping .
  • 1/2 oz active dry yeast .
  • extra virgin olive oil, for brushing .
  • 1 tbsp sea salt .
  • 1 tbsp honey .
  • kosher salt, for topping

Directions
  • Step #1 Preheat oven to 400°F Brush a 12 by 18-inch baking tray with olive oil.
  • Step #2 Set aside.
  • Step #3 Using the mixer bowl, mix the yeast, 4 oz of water & honey.
  • Step #4 Stir together until yeast dissolves into the water.
  • Step #5 Add 2 oz of flour & mix to make a sponge.
  • Step #6 Let rise until double.
  • Step #7 Gradually add the remaining flour, water, olive oil, & salt.
  • Step #8 Using the dough hook attachment, mix over medium speed to make a soft dough.
  • Step #9 Beat for 3 mins.
  • Step #10 Turn off machine, scrape sides of bowl & allow dough to relax for 10 mins.
  • Step #11 Turn on mixer & continue to mix the dough for another 5 mins at medium speed.
  • Step #12 The dough will become velvety & elastic.
  • Step #13 Transfer dough onto prepared baking tray.
  • Step #14 Stretch the dough to fill the tray.
  • Step #15 Cover up with plastic wrap & allow to rise at about room temp for 20 mins.
  • Step #16 Uncover the dough & stretch to cover the entire baking tray.
  • Step #17 Brush with olive oil & dimple with fingertips.
  • Step #18 Sprinkle top with kosher salt, pepper, & thyme.
  • Step #19 Proof for 15 mins.
  • Step #20 Bake for 10 mins, turn around & bake another 6 to 8 mins.
