Asparagus With Garlic And Basil (diabetic) Recipe

Ingredients
  • 1 tsp dried basil (or 1 tbsp. fresh basil, finely sliced) .
  • pepper, to taste .
  • 1/3 c water .
  • 1 tsp reduced sodium soy sauce .
  • cooking spray .
  • 2 garlic cloves, minced .
  • 1 1/2 lbs asparagus, washed, trimmed

Directions
  • Step #1 In a non-stick large skillet, or Dutch oven, heat 1/3 c of water until it boils.
  • Step #2 Add asparagus, cover & cook over med-heat/flame about 5 mins or until asparagus is crisp-tender.
  • Step #3 Uncover & continue to boil about 1-2 mins until water evaporates.
  • Step #4 Do not overcook.
  • Step #5 Remove asparagus & keep warm.
  • Step #6 Spray dry skillet with cooking oil & add garlic & basil.
  • Step #7 Cook & stir 1-2 mins.
  • Step #8 Stir in soy sauce & season to taste with pepper.
  • Step #9 Pour sauce over asparagus & serve as soon as possible.
