Sicilian Cauliflower Salad Recipe

Ingredients
  • 4 anchovies, sliced .
  • 1/4 c capers, drained .
  • 1 tbsp minced Italian parsley .
  • 2 hard-boiled eggs, shelled & minced .
  • 2 tbsps salt .
  • 1/4 c gherkins, minced (sour baby pickles) .
  • 1/2 tsp salt .
  • 1 head cauliflower, cut into florets .
  • 1/2 c pitted black olives, minced .
  • 3 tbsps red wine vinegar .
  • fresh ground black pepper .
  • 1/3 c extra-virgin olive oil

Directions
  • Step #1 Bring 3 quarts of water to a boil.
  • Step #2 Drop in the cauliflower florets & 2 tbsps of the salt; cook this until tender-crisp, about 3 mins, then drain & shock in ice water; drain again.
  • Step #3 Place the cauliflower florets in a bowl.
  • Step #4 Add the remaining 1/2 tsp of salt, parsley, gherkins, olives, the vinegar, tossing once in a while, olive oil, pepper, & set aside to marinate, capers, & anchovies, for 1 hr to 6 hrs at about room temp.
  • Step #5 Sprinkle top with the hard-boiled eggs & enjoy.
  • Step #6 Serves 6.
