Cheesy Topped Bean Soup Recipe

Ingredients
  • 1/4 c dried pinto beans .
  • 1/4 c dried red beans .
  • hot sauce .
  • 1/4 c dried black beans .
  • 1/2 c celery, finely sliced .
  • 1/2 c carrots, sliced .
  • 1/2 c sliced fresh parsley .
  • 1 tbsp chili powder .
  • 2 large garlic cloves, minced .
  • 1/4 tsp salt .
  • 1/4 c dried great northern beans .
  • 1/2 tsp cumin .
  • 4 garlic cloves, minced .
  • 2 bay leaves .
  • 2 tbsps lemon juice .
  • 1 quart crushed tomatoes, with juice .
  • 1/4 c dried lentils .
  • 1 1/2 c shredded monterey jack cheese .
  • 3/4 c onions, finely sliced .
  • 1/4 tsp pepper .
  • 1/4 c dried black-eyed peas .
  • 6 c water

Directions
  • Step #1 Sort & wash the beans.
  • Step #2 Cover up with water to a depth of 2" over beans, bring to a boil, cook 3 mins.
  • Step #3 Turn off heat, cover & let this stand 1 hr.
  • Step #4 Drain.
  • Step #5 Return to the pot & add water, carrot, tomatoes, salt, onion, celery, pepper, garlic, bay leaf, & cloves.
  • Step #6 I sometimes saute the onion, garlic & celery before adding.
  • Step #7 Simmer until beans are tender, about 2 hrs.
  • Step #8 Add parsley, lemon juice, chili powder, cumin, & hot sauce.
  • Step #9 Cook, uncovered, 15 mins.
  • Step #10 Top each serving with cheese.
