• 4 butter lettuce leaves .
• 2 tsps fresh lemon juice .
• 4 tsps Dijon mustard .
• 1/2 c mayonnaise .
• 4 slices tomatoes .
• 1 lb cooked bay shrimp, drained, patted dry .
• 4 fresh dill sprigs .
• 4 slices egg bread or pumpernickel bread, toasted .
• 4 lemon slices, thin .
• 1/2 c fresh dill, sliced .
• 1/2 English cucumber, thinly sliced

• Step #1 Combine first 4 ingredients in medium bowl & season this with salt & pepper.
• Step #2 Spread 1 tbsp dressing over each bread slice.
• Step #3 Mix shrimp into remaining dressing.
• Step #4 Place 1 lettuce leaf on each bread slice.
• Step #5 Arrange 6 cucumber slices on top of lettuce.
• Step #6 Arrange shrimp mixture on top of cucumbers.
• Step #7 Garnish each sandwich with tomato wedge, lemon slice & dill sprig.
