Garlic-potato Croquettes Recipe

Ingredients
  • 4 c warm water .
  • 1 c fresh cilantro, sliced .
  • 1 tsp garam masala .
  • 1 lb red potatoes, about 3 medium, peeled & cooked .
  • 1 tsp salt .
  • vegetable oil (for deep frying) .
  • 3 large garlic cloves .
  • 10 slices white bread, firm, about 1/2-inch thick .
  • 4-6 fresh Thai red chili peppers or serrano chilies or fresh cayenne peppers

Directions
  • Step #1 Mash potaatoes in medium bowl; set aside.
  • Step #2 Dip bread slices into warm water just until moist.
  • Step #3 Immediately remove slices & press between palms of hands, squeezing the water out completely.
  • Step #4 Add bread to potatotes.
  • Step #5 Place cilantro, chilies & garlic in food processor/blender.
  • Step #6 Cover up & process until finely ground.
  • Step #7 Add to potato-bread mixture.
  • Step #8 Add salt & Garam Masala; mix well.
  • Step #9 Knead potato-bread mixture in bowl 3 to 5 mins to form a compact, slightly sticky dough.
  • Step #10 Heat oil (2 to 3 inches deep) in wok or Dutch oven over medium high heat until thermometer inserted in oil reads 350 degrees F.
  • Step #11 Grease palms of hands with extra oil.
  • Step #12 Divide dough into 18 pieces.
  • Step #13 Shape each piece into a ball; flatten ball into 1/2-inch patty.
  • Step #14 Set aside.
  • Step #15 Carefully drop about half of the patties into hot oil & fry 3 to 5 mins, turning every once in awhile, until golden brown.
  • Step #16 Remove with slotted spoon; drain on paper towels.
  • Step #17 Serve croquettes as is or with chutney.
