Rosemary Satin Dinner Rolls Recipe

Ingredients
  • 2 tbsps finely sliced onions .
  • 1/4 c butter .
  • 1/2 tsp dried rosemary, crushed .
  • 1 egg yolk, slightly beaten .
  • 1 tbsp water .
  • 1/4 c water .
  • 1/2 tsp salt .
  • 2 1/2-3 c all-purpose flour .
  • 2 1/4 tsps active dry yeast .
  • 2/3 c cream-style cottage cheese .
  • 1 egg

Directions
  • Step #1 In a large mixing bowl stir this together 3/4 c of the flour & the yeast; set aside.
  • Step #2 In a small saucepan mix cottage cheese, salt, onion, the 1/4 c water, butter, & crushed rosemary.
  • Step #3 Heat & stir until warm (120 degree F to 130 degree F) & butter is almost melted.
  • Step #4 Add cottage cheese mixture to flour mixture.
  • Step #5 Add the whole egg.
  • Step #6 Beat with an electric mixer on lowish speed for 30 seconds.
  • Step #7 Beat on high speed for 3 mins.
  • Step #8 Stir in as much of the remaining flour as you can with a wooden spoon.
  • Step #9 Turn dough out onto a lightly floured surface.
  • Step #10 Knead in enough of the remaining flour to make a moderately stiff dough that is smooth & elastic (6 to 8 mins total).
  • Step #11 Shape dough into a ball.
  • Step #12 Place in a greased bowl, turning once to grease the surface.
  • Step #13 Cover up & let rise in a warm place until double in size (about 1 hr).
  • Step #14 Punch dough down.
  • Step #15 Cover up & let rest for 10 mins.
  • Step #16 Divide dough into 12 balls.
  • Step #17 Place each in a greased muffin c or shape into desired shapes.
  • Step #18 Stir together the egg yolk & 1 tbsp water; brush onto dough.
  • Step #19 Sprinkle top with extra rosemary if desired.
  • Step #20 Cover up & let rise in a warm place until nearly double (about 30 mins).
  • Step #21 Preheat oven to 400F degree F.
  • Step #22 Bake in preheated oven for 12 to 15 mins or until golden.
  • Step #23 Makes 12 rolls.
