Pear Jam Recipe

Ingredients
  • 1/2 tsp cardamom, ground .
  • 8-9 pears, cored & sliced (peeling is optional) .
  • 1/4 c lemon juice .
  • 1 (1 3/4 oz) box pectin, Sure-Jell no-sugar, powdered .
  • 3 c sugar .
  • 1 tbsp ginger, fresh grated .
  • 1/4 tsp cinnamon, ground

Directions
  • Step #1 Place 5-1/2 to 6 c sliced pears & the lemon juice in a heavy pot.
  • Step #2 Mash pears with a potato masher to desired chunkiness.
  • Step #3 If you like it fine you can coarsely grind it.
  • Step #4 But a food processor/blender will make it too pureed for this recipe.
  • Step #5 Stir-in the powdered pectin, spices & ginger.
  • Step #6 Bring to a boil & boil hard for one min.
  • Step #7 Add the sugar.
  • Step #8 Bring back to a boil & boil hard for 4-mins stirring frequently.
  • Step #9 Ladle into sterile jars, seal & process for 10 mins.
  • Step #10 Yield 7 half pints.
