Ingredients
  • 4 peaches, fresh, blanched, peeled, & thinly sliced .
  • 2 c sifted flour .
  • 1/2 lemon, juice of .
  • 1/2 c oil .
  • 1 1/2 c sugar .
  • 1/2 tsp salt .
  • 1 tsp vanilla extract .
  • 2 tsps baking powder .
  • 1 orange, juice of (mix lemon & orange juices to make 1/2 c total citrus juice) .
  • 3 eggs

Directions
  • Step #1 Grease a 13 X 9 pan.
  • Step #2 Preheat oven to 350°F.
  • Step #3 Beat sugar with oil until thoroughly incorporated.
  • Step #4 Beat in eggs, one at a time.
  • Step #5 Add juice & vanilla extract.
  • Step #6 In a separate bowl, mix flour with baking powder & salt.
  • Step #7 Add to sugar mixture, & stir.
  • Step #8 Pour into prepared pan.
  • Step #9 Press peaches into batter in 3 rows - about 12 slices per row.
  • Step #10 Bake about 45 mins, or until cake tests done.
