Chicken Fajitas Recipe

Ingredients
  • 2 tsps olive oil .
  • 1/2 c nonfat sour cream .
  • 1 lb marinated chicken breasts, cut in strips (I use the Fajita seasoning packet) .
  • 1 lb frozen peppers & onions or other frozen fajita vegetables .
  • 1/2 c salsa .
  • 8 medium fat free tortillas (regular or wheat)

Directions
  • Step #1 Marinate chicken 20 to 30 mins, longer for more seasoning.
  • Step #2 Preheat oven to 300°F Wrap tortillas in foil wrap.
  • Step #3 Bake until warm, about 10 mins.
  • Step #4 Meanwhile, heat oil In a large-ish skillet over medium-high heat.
  • Step #5 Add chicken & sauté until cooked through, stirring frequently, about 3 to 5 mins.
  • Step #6 Transfer chicken to a serving plate, cover with foil wrap & transfer to oven to keep warm.
  • Step #7 In same skillet over medium-high heat, sauté frozen vegetables until tender-crisp, about 3 mins.
  • Step #8 Serve chicken & vegetables with warm tortillas, sour cream & salsa.
  • Step #9 Special Notes: Yields about 2 tortillas, 3 oz chicken, ½ c vegetables & 2 tbsps each sour cream & salsa per serving.
