Double Berry Cake Recipe

Ingredients
  • Topping .
  • 3 c all-purpose flour .
  • 1 tbsp all-purpose flour .
  • 2-3 tsps sugar .
  • 2 tsps vanilla extract .
  • 2 tsps baking powder .
  • 2/3 c milk .
  • 2 c fresh cranberries, coarsely sliced (or frozen) .
  • 1 1/2 c sugar .
  • 4 eggs, at about room temp .
  • 1 c butter, softened .
  • 1/2 tsp salt .
  • 3 c fresh blueberries (or frozen)

Directions
  • Step #1 Pre-heat oven to 350F.
  • Step #2 Mix the berries & toss with the flour, set aside.
  • Step #3 In a large bowl beat the butter & the sugar for approx 5 mins, until light coloured & creamy.
  • Step #4 Add the vanilla & the eggs, one at the time, until well mixd.
  • Step #5 Sift flour, baking powder & salt in another bowl, add to the butter mixture in 2 additions, alternating with milk.
  • Step #6 Stir the berries into the batter & por into a greased 9x13 inchpan.
  • Step #7 Sprinkle top with sugar & bake for 50 to 60 mins or until a toothpickinserted in the centre comes out clean.
  • Step #8 When cool cut into squares.
