Ingredients
2 tbsps cornstarch .
3 c sugar .
1 tbsp sugar .
1 tbsp baking powder .
1/2 tsp ginger powder .
oil (for frying) .
2 c flour .
1 tbsp baking soda .
1 c white vinegar .
SAUCE .
2 (8 oz) cans crushed pineapple .
1 large green pepper, finely sliced .
3 1/2 lbs boneless chicken breasts, cut into chunks (you should get about 6-7 dozen pieces) .
2 c cornstarch .
2 2/3 c cold water .
2 tbsps soy sauce .
1 (14 oz) can sliced tomatoes, undrained .
1 large onion, finely sliced .
seasoning salt (optional) .
CHICKEN BALL BATTER
Directions
Step #1 Drain pineapple, reserving the juice.
Step #2 To make the Sauce: in a saucepan mix sugar, vinegar, soy sauce, onion, tomatoes, green pepper, ginger & pineapple; simmer for about 20 mins.
Step #3 In a bowl, mix/whisk the cornstarch with the reserved pineapple juice until smooth, & add to the tomato mixture.
Step #4 Bring to a boil & let simmer for about 2 mins, or until thickened.
Step #5 Remove from heat; set aside to cool.
Step #6 To make the chicken balls: in a bowl mix flour, baking powder, baking soda, cornstarch, sugar & water until smooth.
Step #7 Heat oil in a deep-fryer or Dutch oven to 375 degrees.
Step #8 Dip the chicken pieces into the batter, then drop in hot oil & fry until golden & the juices run clear (about 5 mins).
Step #9 Remove to a paper towel.
Step #10 Sprinkle top with seasoning salt as soon as possible after frying if desired.
Step #11 Serve as soon as possible with sweet & sour sauce.
