Chickenegetable Barley Soup Recipe

Ingredients
  • 2 tbsps olive oil
  • 1 c sliced carrots
  • 4 c sliced fresh mushrooms
  • salt & black pepper to taste
  • 2 1/2 quarts chicken broth
  • 5 c sliced red potatoes
  • 3 c sliced cooked chicken
  • 1 c slivered almonds
  • 1 c quick-cooking barley
  • 2 tbsps butter
  • 1 c sliced celery
  • 1/2 c sliced fresh parsley
  • 4 cloves garlic, minced
  • 1 medium onion, sliced

Directions
  • Step #1 Preheat oven to 400F degrees F (200 degrees C).
  • Step #2 Spread slivered almonds evenly over a baking sheet.
  • Step #3 Toast in preheated oven until golden brown & fragrant.
  • Step #4 Heat the oil in a large stock pot over med-heat/flame.
  • Step #5 Cook onions, mushrooms, celery, & garlic in oil until onions are tender.
  • Step #6 Stir in carrots, chicken, potatoes, & broth.
  • Step #7 Bring to a boil, then stir in the barley.
  • Step #8 Reduce heat, cover, & let simmer 20 mins.
  • Step #9 Remove from heat, & stir in the butter, parsley, & toasted almonds.
  • Step #10 Spice up with salt & pepper to taste.
