Crab Quesadillas Recipe

Ingredients
  • 1/2 lb lump crabmeat, picked over .
  • 4 (8 inch) fat free tortillas .
  • 1 jalapeno pepper, seeded & finely sliced .
  • 2 tbsps nonfat sour cream .
  • 3/4 tsp minced garlic .
  • 1/2 c shredded monterey jack cheese .
  • 1/4 c sliced green onions .
  • 1 tbsp minced fresh cilantro

Directions
  • Step #1 In a bowl, mix the first 6 ingredients; stir this to mix (season to taste w/ salt & pepper).
  • Step #2 Sprinkle top 2 tbsps cheese over each tortilla.
  • Step #3 Divide crab mixture evenly among tortillas.
  • Step #4 Fold in half, pressing carefully to seal.
  • Step #5 Place quesadillas on a baking sheet.
  • Step #6 Broil for 1 min or until tortillas are lightly browned.
  • Step #7 Alternative--may brown quesadillas in a nonstick skillet coated with cooking spray.
