Spicy Yam " Potato" Salad Recipe

Ingredients
  • 3 slices pepper bacon, cooked, drained & crumbled or tempeh bacon .
  • 1/3 c sliced green bell peppers .
  • 1 tbsp canola oil .
  • 1/2 c sliced red onions or yellow onions .
  • 2 lbs yams, peeled & cut into 1-inch chunks .
  • 2 celery ribs, with leaves minced .
  • 3/4 tsp salt, divided .
  • 1 jalapeno pepper, finely sliced (substiitute a milder chili if desired) .
  • 1 tsp prepared dry mustard .
  • fresh flat-leaf Italian parsley .
  • 1/3 tsp chili powder (original recipe specified Tabasco) .
  • 5 tbsps white wine vinegar .
  • 2 tbsps fresh parsley, sliced or 1 tbsp dried parsley .
  • Garnish .
  • 3 tbsps brown sugar

Directions
  • Step #1 Preheat oven to 400F degrees.
  • Step #2 Arrange the cut up yams (or sweet potatoes if using) on a baking pan in single layer.
  • Step #3 Drizzle with a little bit of oil or cooking oil spray.
  • Step #4 Sprinkle top with half of the salt & bake for about 25 mins or until fork tender.
  • Step #5 While the yams are baking, celery, 2 tbsps fresh parsley, stir this together In a large-ish serving bowl the remaining salt, 3/4 of the crumbled bacon & all other ingredients.
  • Step #6 Next, add the cooked yams into the salad bowl & toss together carefully to coat.
  • Step #7 Sprinkle top the remaining bacon crumbles on top of salad & garnish with fresh parsley.
  • Step #8 Serve as soon as possible or chill in the fridge.
  • Step #9 Adjust seasonings before serving.
