Step #2 Arrange the cut up yams (or sweet potatoes if using) on a baking pan in single layer.
Step #3 Drizzle with a little bit of oil or cooking oil spray.
Step #4 Sprinkle top with half of the salt & bake for about 25 mins or until fork tender.
Step #5 While the yams are baking, celery, 2 tbsps fresh parsley, stir this together In a large-ish serving bowl the remaining salt, 3/4 of the crumbled bacon & all other ingredients.
Step #6 Next, add the cooked yams into the salad bowl & toss together carefully to coat.
Step #7 Sprinkle top the remaining bacon crumbles on top of salad & garnish with fresh parsley.
Step #8 Serve as soon as possible or chill in the fridge.
