Salmon W/ Asparagus, Tomato Mustard & Pinenut Hollandaise Recipe

Ingredients
  • 1 tbsp honey .
  • 1 1/2 c extra-virgin olive oil .
  • 1 c pine nuts .
  • 4 egg yolks .
  • 8 garlic cloves .
  • 1 tsp salt .
  • 3 tbsps mustard oil .
  • 2 sprigs tarragon .
  • 1 tbsp melted butter .
  • 8 tomatoes, seeded .
  • 4 (5 oz) salmon steaks .
  • 2 white peppercorns .
  • Salmon .
  • 2 limes, zest of .
  • 4 spring roll wrappers .
  • Tomato Mustard Jam .
  • 2 basil leaves .
  • Pine Nut Hollandaise .
  • 1/2 lime, juice of .
  • 1/2 tsp champagne vinegar .
  • 2 tbsps olive oil .
  • 1/2 c pine nut oil .
  • 8 shallots .
  • 4 asparagus spears, cooked (looks nice with 2 each green & white) .
  • 8 mint leaves .
  • 2 dried hot chili peppers .
  • 1 c olive oil

Directions
  • Step #1 Brush each spring roll wrapper with butter & place 2 mint leaves, a salmon steak & the cooked asparagus inside each wrapper.
  • Step #2 Sear in olive oil.
  • Step #3 Tomato/Mustard: Place all ingredients into a saucepan & let simmer for about 45 mins.
  • Step #4 Yields about 6 c.
  • Step #5 Pine Nut Hollandaise: Bring pine nuts & olive oil to a simmer & continue to simmer until the nuts are golden brown.
  • Step #6 Whisk egg yolks with vinegar & lime juice.
  • Step #7 Pour the pine nut oil slowly into the mixture to form an emulsion.
  • Step #8 Keep the hollandaise warm in a bowl over a pot of water or use abain-marie.
  • Step #9 Makes 3 c.
