Italian Pudding Recipe

Ingredients
  • 1/2 tsp vanilla extract .
  • 1/4 c dried apricots .
  • 1 c heavy cream, whipped .
  • 2-3 c fresh fruit (avoid citrus or pineapple because they may curdle the pudding) .
  • 1/4-1/2 c raspberry preserves .
  • 1/4 c raisins .
  • 1 lb ricotta cheese .
  • 1/4 c almonds, toasted

Directions
  • Step #1 Slice the dried apricots.
  • Step #2 If you're using unsulfured apricots, soak them in warm water for 20 mins to plump them up before slicing.
  • Step #3 Using an electric beater, whip the ricotta cheese until smooth.
  • Step #4 Mix in the vanilla & raspberry preserves.
  • Step #5 Fold in the fruits & nuts.
  • Step #6 Add in the whipped cream not more than 2 hrs before you intend to serve.
  • Step #7 Fold in the whipped cream & serve.
