Asparagus With Parmesan Mousse Recipe

Ingredients
  • 3/4 c thickened cream .
  • 2 egg yolks .
  • 2/3 c freshly grated parmesan cheese .
  • 1 whole egg yolk .
  • 3/4 c pouring cream .
  • kitchen aluminum foil wrap .
  • 16 asparagus spears, trimmed .
  • fresh ground black pepper, to taste .
  • 2 tbsps plain flour .
  • salt, to taste .
  • 1 tbsp unsalted butter .
  • 1/4 c milk

Directions
  • Step #1 Preheat the oven to 225°C.
  • Step #2 Heat 1 tbsp of butter in a saucepan, continually stirring.
  • Step #3 Then add the flour & mix well to make a roux.
  • Step #4 At the same time, bring the milk & pouring cream to the boil.
  • Step #5 Then add it to the flour mix & whisk well until the mixture is smooth.
  • Step #6 Whisk the egg, egg yolks & thickened cream.
  • Step #7 Then add them to the hot mixture & stir well.
  • Step #8 Add the parmesan & seasonings, & whisk well.
  • Step #9 Lightly brush 4 dariole moulds with melted butter & pour in the mixture.
  • Step #10 Place in an oven tray & fill 2/3 up the sides of the moulds with boiling water.
  • Step #11 Then cover the moulds with foil wrap & cook in the oven for about 40-45 mins until a knife comes out clean.
  • Step #12 Blanch the asparagus in lightly salted boiling water until crisp-tender.
  • Step #13 Drain & serve alongside the turned out mousses.
