Low-carb Beef Stroganoff Recipe

Ingredients
  • 1 1/2 lbs beef tenderloin, trimmed well .
  • 2 tbsps coconut oil .
  • 1 oz butter .
  • 2 tbsps freshly sliced parsley .
  • 12 oz button mushrooms .
  • 3/4 c sour cream .
  • 2 tsps Wondra Flour .
  • salt, to taste .
  • 3/4 c beef stock or broth .
  • pepper, to taste

Directions
  • Step #1 Pound meat thin.
  • Step #2 Cut in strips about 1/4" wide & 2" long.
  • Step #3 Put on a large plate & sprinkle lightly with salt & pepper.
  • Step #4 If you have time, put in the fridge meat for an hr or longer.
  • Step #5 Wipe mushroom clean with a damp paper towel.
  • Step #6 Trim off hard ends of stems.
  • Step #7 Heat a large, heavy skillet on medium-high.
  • Step #8 Add the oil.
  • Step #9 Quickly brown the meat in the hot oil on both sides, about 2 mins.
  • Step #10 Remove meat to a holding plate.
  • Step #11 Add the butter to the skillet.
  • Step #12 Reduce heat to medium-low.
  • Step #13 Add the mushrooms & cook this until tender, about 5 mins.
  • Step #14 Add the beef stock & stir this to loosen particles on the bottom of the skillet.
  • Step #15 Add the flour & stir in theto the broth.
  • Step #16 Simmer for about 2 mins on low.
  • Step #17 Add meat & the sour cream & heat through.
  • Step #18 Adjust seasoning, sprinkle with parsley, & serve as soon as possible.
