Fig Newtons (homemade) Recipe

Ingredients
  • 1/2 tsp vanilla .
  • 1 large egg .
  • 1 c water (1 c. for dried figs, 1/2 c. for fresh) .
  • 1 c sugar .
  • 1/2 c butter, room temp .
  • 1 tbsp cream or milk .
  • 1 lb dried figs or 2 lbs fresh figs .
  • 1 c sugar .
  • 1 3/4 c flour .
  • 1/2 tsp salt .
  • 1 tsp baking powder

Directions
  • Step #1 Dice figs, soak in water 1 hr.
  • Step #2 Add sugar & cook on medium heat until of thin jam consistency.
  • Step #3 Beat sugar, butter, egg, milk & vanilla until well mixed.
  • Step #4 Add dry ingredients.
  • Step #5 Mix well & put in the fridge for 1 hr.
  • Step #6 Place 1/2 on well floured dough cloth; knead about 6 times.
  • Step #7 Roll out to 1/4" thick.
  • Step #8 Line 13 x 9" glass baking dish; cover with figs.
  • Step #9 Roll remaining dough, cover figs.
  • Step #10 Cook at 350° for 30 mins.
  • Step #11 Let cool & cut into squares.
  • Step #12 Depending on the size you cut you can get a couple dozen cookies.
