Coquille St. Jacques - France Recipe

Ingredients
  • 1 oz butter .
  • 1/2 c dry white wine .
  • 1 drop lemons .
  • 1 big shallots .
  • 6 large scallops .
  • 2 tbsps olive oil .
  • 1 c water .
  • 6 tbsps dry breadcrumbs .
  • 1 drop olive oil .
  • 15 medium shrimp .
  • 1 1/2 oz flour .
  • 1 tbsp sour cream .
  • 3 oz mushrooms .
  • 1 bay leaf .
  • salt & pepper

Directions
  • Step #1 Add in pot: water, a drop of oil, bay leaf, shallot, wine, lemon & salt.
  • Step #2 Add scallops sliced --they should be covered by the liquid.
  • Step #3 Simmer covered with a lid & let cook 5 mins.
  • Step #4 Remove scallops from cooking liquid & strain, keep the juice.
  • Step #5 In frying pan, cook sliced mushrooms in the 2 tbsps of olive oil for about 5 mins, stirring often.
  • Step #6 Prepare 4 dishes.
  • Step #7 Divide scallops in each.
  • Step #8 Divide shrimp in each.
  • Step #9 Divide mushroom & put on top.
  • Step #10 In medium saucepan, prepare white sauce: Melt butter over medium flame & pour flour in; stir.
  • Step #11 Reduce heat & add a bit at a time the cooking juice; stir & mix.
  • Step #12 Do this until the sauce is thickened.
  • Step #13 Spice up with salt & pepper; add the cream.
  • Step #14 Pour over the seafood equally.
  • Step #15 Sprinkle top with the breadcrumbs & dot with butter.
  • Step #16 Put under grill for about 10 mins.
