Bananas Bombay Recipe

Ingredients
  • 1/2 lemon (take out seeds) .
  • butter, to grease pan .
  • 2-3 bananas .
  • 2 tsps vanilla extract .
  • 1/2 c rum (I use captain morgans,make sure it lights well) .
  • 1 dash cinnamon .
  • 1-2 c orange juice .
  • 1-2 c brown sugar .
  • 1/2 orange, reduce amount of orange juice if used (optional)

Directions
  • Step #1 in a sauce pan(slightly greased with butter) on medium heat- add in orange juice & brown sugar.
  • Step #2 Amounts in the recipe are not exact, use to taste.
  • Step #3 Stir the mixture into a sauce (shouldnt be very thick but not runny).
  • Step #4 cut bananas into bite size pieces & add to sauce mixture.
  • Step #5 Coat well.
  • Step #6 squeeze the juice of the lemon (and orange) into the pan, mix well.
  • Step #7 Add more sugar if the mixture becomes too runny.
  • Step #8 add in vanilla, cinnamon & any other spice you would like to add in (I've used nutmeg with peaches before)stir well.
  • Step #9 add in rum, turn off the kitchen lights & light the bananas (when in doubt, use less rum than needed & repeat process until the desired flavor is obtained).
  • Step #10 let it burn out (use a metal spoon to slightly stir) & take off heat.
  • Step #11 serve over vanilla ice cream.
