Maple Syrup Glazed Ham - Jambon Glacé A L ' érable Recipe

Ingredients
  • 2 c maple sugar, crumbled .
  • maple syrup water .
  • 2 tsps whole cloves (optional) .
  • 2 c dried raisins .
  • 2 c maple syrup, mixd with .
  • 4 tsps apple juice .
  • 10 c water .
  • extra ingredients .
  • 1 tsp dried mustard (Keen's Dried Mustard) .
  • 1 (9 lb) ham (4 kg)

Directions
  • Step #1 In a large pot bring the ham to a boil in the maple syrup water.
  • Step #2 Reduce the heat & let simmer on low heat for 3 to 4 hrs, or until the ham is tender.
  • Step #3 Remove the ham from the water & let sit for 15 mins or until cooled.
  • Step #4 Reserve a few c of this water for later use.
  • Step #5 Once ham is cooled remove the rind & place aside for now.
  • Step #6 In a bowl crush the maple sugar & mix with the mustard & apple juice, stir well till mixed.
  • Step #7 Add the cloves to the maple sugar & juice mixture & let sit for 15 mins until the flavors mix together.
  • Step #8 Place your ham in a roasting pan & baste your ham with the maple sugar juice mixture, making sure to heavily coat the whole ham.
  • Step #9 Add a c or more of the ham water into your roasting pan & add the ham rind.
  • Step #10 Add the raisins, placing some raisins over the the top of ham.
  • Step #11 Bake ham for 40 to 50 mins in a 300°F oven.
  • Step #12 Baste your ham often adding more ham water if needed, the more the tastier it will be.
  • Step #13 Remove from oven & place on serving platter, pour the raisins & maple syrup drippings over the ham.
  • Step #14 Note: I use quebec smoked ham.
  • Step #15 My mother makes this ham with bacon strips over top of ham held on with toothpicks.
  • Step #16 Like I said the more flavors the tastier it will be.
  • Step #17 We make this ham for Easter, Thanksgiving or Christmas.
  • Step #18 Serve with mashed potatoes, carrots & turnips all whipped together.
