California Nicoise Salad Recipe

Ingredients
  • 4 tomatoes, quartered .
  • 3/4 c extra virgin olive oil .
  • Dressing .
  • 1/2 tsp salt .
  • 1/2 c kalamata olives, pitted .
  • 1/4 tsp garlic powder .
  • 6 anchovy fillets .
  • 1 tbsp fresh basil, minced .
  • 1 head butter lettuce .
  • 3 hard-boiled eggs, peeled & quartered .
  • 2 c canned solid albacore tuna, chilled .
  • 1/4 c red wine vinegar .
  • Salad .
  • 1/4 tsp dried basil .
  • 1/4 tsp dry mustard .
  • 1 tbsp fresh chives, minced .
  • 3 c green beans, cooked & chilled .
  • 1 tbsp fresh tarragon, minced .
  • 1 tbsp water .
  • 1/8 tsp black pepper

Directions
  • Step #1 Blend vinegar, garlic powder, salt, pepper, water, mustard & basil thoroughly.
  • Step #2 Beat in the oil.
  • Step #3 Line a shallow bowl or dish with the large outer leaves of lettuce.
  • Step #4 Break remaining lettuce into bowl & toss with 2 tbls of the dressing.
  • Step #5 Separately season beans, tomatoes & tuna with dressing & arrange ove lettuce.
  • Step #6 Garnish with olives, eggs & anchovies.
  • Step #7 Pour 1/2 to 3/4 dressing over all & sprinkle with the herbs.
