Ingredients
12 tbsps butter, chilled .
For Sour Cream Pastry Dough .
1/4 lb mushrooms, sliced .
Egg wash .
1 egg .
3 lbs ground beef or ground veal or ground pork .
4 tbsps butter .
1 egg .
1 medium onion, sliced .
2 tbsps milk .
1/4 c parsley, sliced .
1/2 c sour cream .
1/2 c milk .
1 tsp salt .
1 c cheddar cheese or swiss cheese, grated .
2 1/4 c flour .
Filling
Directions
Step #1 Sift the flour & salt together into a large bowl.
Step #2 With 2 knives cut in the butter until the mixture is like coarse meal.
Step #3 In a separate bowl mix the egg & sour cream.
Step #4 Add this to the flour mixture until the dough forms a soft, pliable ball.
Step #5 Wrap the dough in wax paper & put in the fridge for 1 hr.
Step #6 After chilling, divide the dough in half & roll out each half to a rectangle 6"x14".
Step #7 Save any scraps of dough.
Step #8 Butter the bottom of a flat cookie sheet or jelly-roll pan.
Step #9 Put one sheet of the pastry onto the pan.
Step #10 Melt butter in a 12" skillet.
Step #11 Add the mushrooms & cook them for 6 - 8 mins, until lightly colored.
Step #12 Add the meat & continue to cook this until the meat loses all trace of pink color.
Step #13 Combine the mushrooms, cheese, parsley, cooked meat, onion, & milk In a large-ish mixing bowl.
Step #14 Form the meat mixture into a ball & put it in the center of the dough.
Step #15 With your hands, very carefully pat the meat into a loaf shape.
Step #16 Cover up this with the second piece of pastry dough & seal the edges with a fork.
Step #17 Moisten the dough with a pastry brush dipped in the egg & 2 Tbl milk which has been beaten together.
Step #18 Prick holes in the top of the loaf to allow steam to escape.
Step #19 Roll out the scraps of dough & cut them into strips.
Step #20 Crisscross these over the top of the loaf to form a design.
Step #21 Again brush it with the egg/milk mixture.
Step #22 Bake the loaf at 375 F for 45 mins, when the pastry will be golden brown.
