Norwegian Potato Doughnuts Recipe

Ingredients
  • 1/2 c butter or shortening .
  • 3 eggs .
  • 5 1/2 c flour .
  • vegetable oil (for frying) .
  • 1 tsp vanilla extract .
  • 1 tsp salt .
  • 1 c buttermilk .
  • 1 1/2 tsps baking soda .
  • 1 tsp fresh grated nutmeg .
  • 4 tsps baking powder .
  • 2 c sugar .
  • 1 1/2 c hot mashed potatoes, leftover work great

Directions
  • Step #1 Reheat mashed potatoes.
  • Step #2 Stir in the butter or shortening into the potatoes in a small bowl.
  • Step #3 In mixing bowl, beat eggs & sugar 3-4 mins until eggs are pale yellow.
  • Step #4 Stir in the buttermilk & vanilla.
  • Step #5 Stir in the potatoes.
  • Step #6 Stir in the flour, powered & soda, salt & nutmeg.
  • Step #7 Cover up & put in the fridge at least 1 hr.
  • Step #8 Turn dough onto a floured surface & roll to ½ inch thickness.
  • Step #9 Cut with a donut cutter.
  • Step #10 Add the oil to 2 inch depth in a deep skillet or Dutch oven.
  • Step #11 (I like cast iron because the temperature stays constant).
  • Step #12 Heat oil to about 350 degrees.
  • Step #13 Fry donuts in batches but do not crowd in pan.
  • Step #14 Turn once until both sides are browned about 2-3 mins on each side.
  • Step #15 Transfer with a slotted spoon to paper towels to drain.
  • Step #16 If desired you can roll in sugar or cinnamon sugar or glaze.
  • Step #17 These are best served warm.
