Low-fat Harvest Grape Cake Recipe

Ingredients
  • 8 oz plain flour (225g) .
  • icing sugar, for dusting (optional) .
  • 1 lb seedless black grapes (450g) .
  • 3 tbsps olive oil .
  • 5 oz golden caster sugar (140g) .
  • butter, for greasing .
  • 5 eggs .
  • 1 tsp baking powder

Directions
  • Step #1 Heat oven to 180C / fan 160C / gas 4.
  • Step #2 Grease a deep, round 20cm cake tin.
  • Step #3 Dust the grapes with a little of the flour.
  • Step #4 Put the remaining flour, sugar & baking powder into a large bowl.
  • Step #5 Add the eggs, beating well with a whisk after each addition, one at a time, until the mixture is the consistency of batter.
  • Step #6 Add the grapes & olive oil & mix well together.
  • Step #7 Pour the mixture into the prepared tin & bake for about 1 hr until golden & well risen.
  • Step #8 Turn out onto a wire rack & leave to cool.
  • Step #9 If you like, dust the top this with icing sugar to serve.
