Ingredients
1 lb baby spinach .
1 c sour cream .
2-3 tbsps white wine vinegar .
4 crusty poppy seed rolls or buns, of your choice .
gourmet potato chips (such as Terra Chips Onion & Herb Yukon Gold or blue potato chips) .
1 small red onion, peeled & sliced .
1 seedless cucumber, cut in 1/2 lengthwise, then sliced into half moons .
3-4 tbsps capers, drained run your knife through them once .
1 tbsp poultry seasoning, a palm full .
3 plum tomatoes, seeded then thinly sliced .
3-4 tbsps fresh dill, sliced (can be snipped with kitchen scissors) .
extra-virgin olive oil, for drizzling, plus a couple tbsps .
salt & pepper .
2 shallots, finely sliced .
5 button mushrooms, stems removed, finely sliced .
1/4 lb havarti with dill (cut into 1/4-inch dice) .
2 tbsps Dijon mustard .
2 large radishes, thinly sliced .
2 lbs ground chicken
Directions
Step #1 Combine ground chicken, sliced mushroom, sliced shallots, salt & pepper, Dijon mustard, sliced Havarti, poultry seasoning, & a drizzle of extra-virgin olive oil.
Step #2 Mix thoroughly.
Step #3 Preheat skillet over medium-high heat.
Step #4 Separate meat into four equal portions & form into 1" thick patties.
Step #5 Drizzle extra-virgin olive oil over patties & place them in the hot skillet.
Step #6 Cook 6 mins on each side.
Step #7 Meanwhile, mix sour cream, in a small mixing bowl, dill & capers; then season this with salt & pepper.
Step #8 In a salad bowl mix cucumbers, half the red onion, tomatoes & 3/4 of the spinach.
Step #9 Dress salad with white wine vinegar, salt & pepper then drizzle with a couple tbsps olive oil to coat lightly & evenly.
Step #10 Toss to mix & adjust salt & pepper, to your taste.
Step #11 Split rolls or buns.
Step #12 Place burgers on the bun bottoms.
Step #13 Top with sliced radishes, baby spinach & a heaping spoonful of herb-caper dressing slathered across bun tops.
Step #14 Add remaining sauce to salad & toss.
Step #15 Fancy chips finish the plate.
