Buttermilk Fried Boneless Chicken Breast Recipe

Ingredients
  • 2 c all-purpose flour .
  • 1 quart buttermilk .
  • 1 tbsp kosher salt (kosher salt is best but regular salt will do fine!) .
  • 1/4 tsp celery powder .
  • oil (for frying, do not use olive oil) .
  • 1/2 tsp dried thyme .
  • 2 1/2 lbs boneless skinless chicken breasts, sliced in half .
  • COATING .
  • 2 tsps garlic powder .
  • 3 tsps salt (you can reduce to 2 tsps if desired) .
  • 1 pinch cayenne pepper (or to taste) (optional) .
  • 1 tsp black pepper .
  • 1 tsp Old Bay Spice uping .
  • 1/2 tsp marjoram

Directions
  • Step #1 Soak the chicken breasts in the buttermilk & salt for 8-24 hrs.
  • Step #2 When ready to make the breasts, mix all coating ingredients together, & coat each chicken breast.
  • Step #3 Place oil in a 10-inch heavy-bottomed skillet up to about 1/3 of the pan.
  • Step #4 Heat to about 350°, then reduce heat a bit just before frying the breasts.
  • Step #5 Cook/fry about 8 mins per side.
  • Step #6 *NOTE* reduce the heat if you find that the chicken is browning too much, careful not to over brown.
