Mexican Squash And Ground Beef Casserole Recipe

Ingredients
  • 1 tsp chili powder .
  • 1 tbsp oil .
  • 1 (14 1/2 oz) can sliced tomatoes, undrained or 1 pint fresh tomatoes, sliced & 1/2 c water .
  • 1 small onion, sliced .
  • 3 medium yellow squash, sliced .
  • 1 lb ground beef or Italian sausage .
  • 1 c cheddar cheese .
  • 1 tsp cumin .
  • 1 tsp smoked paprika .
  • 1 garlic clove, minced .
  • salt & pepper

Directions
  • Step #1 In a large skillet over med-heat/flame, cook the ground beef until evenly brown.
  • Step #2 Drain, & set aside.
  • Step #3 Heat the oil in the skillet over med-heat/flame.
  • Step #4 Mix in the squash, onion & garlic & saute until tender.
  • Step #5 Add the ground beef & tomatoes (and water if fresh tomatoes are used) into the skillet.
  • Step #6 Spice up with chili powder, cumin, paprika, salt, & pepper.
  • Step #7 Turn mixture into an ovenproof casserole dish.
  • Step #8 Top with cheddar cheese.
  • Step #9 Bake in 400F oven for 15 mins.
