Creamy Curry Pork And Rice Bake Recipe

Ingredients
  • 3-4 large carrots, halved lenghwise & cut into about 1-inch half-moons .
  • 1 (14 oz) can chicken broth, undiluted .
  • fresh garlic (optional) .
  • 2 lbs pork shoulder, cut into about 2-inch cubes .
  • 1 big onions, sliced .
  • 2 tbsps curry powder (can use a little more if desired) .
  • 2-4 tbsps oil .
  • salt .
  • 1 (10 oz) box frozen spinach, drained (optional) .
  • 1 (12 oz) box uncooked basmati rice or 2 c uncooked white rice .
  • 1 (13 oz) can coconut milk .
  • 1 (19 oz) can chickpeas, drained & rinsed .
  • 1/2 c water .
  • pepper (optional)

Directions
  • Step #1 Heat oven to 350 degrees.
  • Step #2 In a large deep oven-proof pot, heat oil over medium-high heat.
  • Step #3 Brown the pork in 2 batches about 3 mins per batch; set aside to a plate.
  • Step #4 Return meat to the pot.
  • Step #5 Add in curry powder, carrots & onion (and garlic if using); cook about 5 mins.
  • Step #6 Add in coconut milk, chicken broth, water & salt; bring to a boil.
  • Step #7 Stir in rice, chickpeas & spinach, cover with lid.
  • Step #8 Place in oven & bake for about 25-30 mins, or until rice is tender.
  • Step #9 Let stand, covered for 5 mins before serving.
