Ingredients
1 1/2 c sugar .
1 c fresh raspberries, crushed .
12-14 unblemished peaches (any good canning variety) .
1/4 tsp nutmeg .
1 c white wine vinegar
Directions
Step #1 Wash & drain the peaches.
Step #2 Bring 2 quarts of water to a boil In a large-ish saucepan.
Step #3 Place the peaches in a wire basket, & dip them into the boiling water (or use a slotted spoon).
Step #4 Allow the peaches to stay in the pot for 2 mins.
Step #5 Remove the basket, plunge the peaches inot a pan or sink of ice water, then drain.
Step #6 When the peaches are cool enough to handle, slip off the outer skins, cut in half & remove the pits.
Step #7 Place the peach halves in a colander & rinse quickly.
Step #8 Set peaches aside to drain while preparing the pickling solution.
Step #9 In a medium saucepan, sugar, wine vinegar, bring the raspberries, & nutmeg to a boil.
Step #10 Allow the mixture to bubble for 2--3 mins.
Step #11 Lower the heat while packing the peaches, but remember to keep the liquid very hot.
Step #12 Gently spoon the peaches into hot, sterilized canning jars (with an optional cleaned & blanched peach seed).
Step #13 Pour the hot raspberry liquid over the fruit, leaving 1/2 inch head space.
Step #14 Release the air bubbles.
Step #15 Clean the rims of the jars.
Step #16 Add the lids (follow manufacturer's instructions) & rings & tighten only fingertip tight.
Step #17 Process in a hot-water bath for 25 mins.
Step #18 Remove & set aside to cool in a draft-free area before storing.
