Step #1 Cut a small x in skin of blossom end of each tomato.
Step #2 Blanch tomatoes in a saucepan of boiling water 3 seconda & as soon as possible transfer with slotted spoon to bowl of ice water to stop cooking.
Step #3 Drain & peel, transferring to large, shallow dish.
Step #4 Stir together vodka, then pour over tomatoes, sugar, vinegar, & zest until sugar is dissolved, carefully tossing to coat.
Step #5 Marinate, covered & chilled, 30 mins to 1 hr.
