Sole Meuniere Recipe

Ingredients
  • 1/2 freshly squeezed lemon, juice of .
  • 2 fillets of sole (about 300g, skinned & cleaned) .
  • fine sea salt .
  • To serve .
  • 2 tbsps sunflower oil .
  • plain flour (enough to coat the fish) .
  • flat leaf parsley, finely sliced .
  • 40 g unsalted butter .
  • 1/2 lemon, thinly sliced

Directions
  • Step #1 Put some flour on a large place, add the fish, cover with the flour on both sides & shake off the excess.
  • Step #2 Reserve 2 TBs of the butter.
  • Step #3 Heat the oil & remaining butter over medium high heat in a nonstick frying pan large enough to hold both fish side by side.
  • Step #4 When it sizzles, add the sole & cook for about 3 mins.
  • Step #5 Turn them over & cook on the other side for 3 mins.
  • Step #6 Sprinkle top the first side with salt while the second side is cooking.
  • Step #7 When the fish is cooked through, transfer to warmed dinner plates & season the second side.
  • Step #8 Return the frying pan to the heat, add the remaining 2 TBS butter & melt over high heat.
  • Step #9 When it begins to sizzle, lower the heat & add the lemon juice.
  • Step #10 Cook, scraping the pan for about 10 seconds; do not let the butter burn.
  • Step #11 Pour this sauce over the fish & sprinkle with parsley.
  • Step #12 Serve as soon as possible with sliced lemon.
