Spicy Honey Chicken And Celery, Szechuan Style. Recipe

Ingredients
  • 2 tbsps honey .
  • 1 kg boneless chicken breasts, cut in 1 1/2 inc cubes .
  • 1 1/2 tsps ground szechwan pepper (may be substituted by 1/2 t cayenne) .
  • 1/2 c lemon juice .
  • 1/2 c light soy sauce .
  • 5 celery ribs, peeled & cut in 1 inch pieces .
  • 3 tsps minced garlic .
  • 3 tbsps cornstarch

Directions
  • Step #1 Toss chicken pieces with cornstarch to coat.
  • Step #2 Heat oil in wok or skillet, stir-fry celery pieces over high heat for one min & set aside.
  • Step #3 Add more oil to utensil if required & quickly brown chicken pieces with garlic.
  • Step #4 Work in two batches if necessary.
  • Step #5 Return celery & chicken to utensil, add rest of the ingredients, cover & let simmer until chicken is cooked, approximately 3 min.
  • Step #6 Serve with boiled or fried rice & stir-fried vegetables.
