Baked Egg Rolls Recipe

Ingredients
  • 10 egg roll wraps .
  • 1 tsp rice syrup .
  • 1 tsp tamari .
  • 1 pinch sea salt .
  • 2 c leeks, washed & thinly sliced .
  • 1/2 yellow bell pepper .
  • 1 1/2 c snow peas, thinly sliced .
  • 3 tbsps water .
  • 2 tsps vinegar, white wine .
  • 1/2 red bell pepper .
  • 1 tsp olive oil

Directions
  • Step #1 Preheat oven to 350°F Heat wok over high heat until very hot.
  • Step #2 Add oil & salt, then leeks; cook 3 mins or until leeks are softened, stirring.
  • Step #3 Add peppers & cook 6 mins, stirring frequently.
  • Step #4 Meanwhile, mix vinegar, in a small bowl, tamari & rice syrup.
  • Step #5 Add snow peas & vinegar mixture to stir fry; cook 1 min.
  • Step #6 Add water, cover & steam 2 mins or until snow peas are done.
  • Step #7 Set aside.
  • Step #8 To make eggrolls, place 2 to 3 tbsps of filling diagonally on wrapper.
  • Step #9 Fold the corner over the filling, then fold both sides inches Moisten edge of last flap with water & roll tightly.
  • Step #10 Place filled egg rolls on a lightly oiled baking sheet & bake 20 to 25 mins or until golden.
