Chicken Seashell Salad Recipe

Ingredients
  • 1/2 tsp almond extract
  • 1/4 c cashews
  • 1 1/2 c seashell pasta
  • 3/4 c sliced celery
  • 3 boneless, chicken breast halves - cooked, skinned
  • 1 (3 oz) can mandarin oranges, drained
  • 1 c mayonnaise
  • 3 oz pineapple tidbits, juice reserved
  • 2 small Gravenstein apples, peeled, cored & sliced

Directions
  • Step #1 Cook macaroni in a large pan of boiling water until al dente.
  • Step #2 Drain, & rinse.
  • Step #3 Set aside.
  • Step #4 Place nuts in a dry skillet.
  • Step #5 Toast over med-heat/flame, turning frequently, until nuts are fragrant & lightly browned.
  • Step #6 In a large bowl, pineapple, apples, celery, chicken, mix pasta, mandarin oranges, & toasted nuts.
  • Step #7 In a small bowl, reserved pineapple juice, mix together mayonnaise, & almond flavoring.
  • Step #8 Stir into pasta mixture, & mix well.
  • Step #9 Chill.
