Easter Biscuits/cookies Recipe

Ingredients
  • 55 g butter .
  • 1 tsp caraway seeds .
  • 1/2 grated lemon, zest of .
  • 1 egg yolk .
  • 55 g caster sugar .
  • 30 g granulated sugar .
  • 55 g currants .
  • 110 g plain flour

Directions
  • Step #1 Preheat oven to 180C/350Fgas mark 4.
  • Step #2 Line a baking sheet with greaseproof paper.
  • Step #3 Cream together the butter, caster sugar & lemon zest.
  • Step #4 Beat in the egg.
  • Step #5 Fold in flour, caraway seeds & currants.
  • Step #6 Roll out the dough 5 mm (1/4 inch) thick on a floured board.
  • Step #7 Cut into large rounds & carefully lift them onto a baking sheet.
  • Step #8 Prick with fork & sprinkle with granulated sugar.
  • Step #9 Bake in the preheated oven for 10 - 15 mins until set & pale golden.
  • Step #10 leave on a wire rack to crisp & cool.
