Thai Lettuce Wraps Recipe

Ingredients
  • 1/2 head iceberg lettuce, halved again .
  • 1 c shredded cabbage & carrot coleslaw mix (coleslaw mix without dressing) .
  • 1 tbsp fish sauce .
  • 2 tbsps fresh ginger, minced .
  • 1 red bell pepper, seeded & sliced thin .
  • 1 lb chicken tenders, sliced thin .
  • 1/2 seedless cucumber, sliced .
  • 2 c fresh basil leaves .
  • 1/2 c plum sauce .
  • 2 tbsps vegetable oil .
  • 3 green onions, sliced at an angle .
  • 4 garlic cloves, minced

Directions
  • Step #1 Heat a large skillet over high until hot.
  • Step #2 Add the vegetable oil, then the chicken.
  • Step #3 Cook for two mins stirring constantly.
  • Step #4 Toss in the ginger, bell pepper, garlic, cabbage/carrot mix & green onions.
  • Step #5 Stir-fry another two mins.
  • Step #6 Add the plum sauce & toos for one min, then add the basil.
  • Step #7 Drizzle in fish sauce & turn to coat evenly.
  • Step #8 Pour into a bowl.
  • Step #9 Place small heaps of chicken mixture onto a 1 or 2 leaf thick piece of lettuce.
  • Step #10 Sprinkle top cucumber over it & fold to eat like a taco.
