Chicken And Two Bean Salad Recipe

Ingredients
  • 2 tbsps sliced fresh curly-leaf parsley .
  • Dressing .
  • 2 tbsps sliced fresh tarragon (or 2 tsps dried tarragon) .
  • 1/2 lb fresh green beans, ends removed, cut in half horizontally .
  • 1 tbsp fresh lemon juice .
  • 1/4 c sliced celery .
  • salt .
  • 2 tbsps sliced red onions .
  • 1/2 lb fresh wax beans, ends removed, cut in half horizontally .
  • 1/2 c sliced radishes .
  • 3 1/2 c cubed cooked chicken .
  • pepper .
  • 1/2 c low-fat sour cream .
  • 1/2 c mayonnaise

Directions
  • Step #1 Bring a saucepan of water to a boil; add the beans.
  • Step #2 Cook 4-5 mins or just until crisp-tender.
  • Step #3 Drain & refresh under cold water to stop the cooking & set their color.
  • Step #4 Add the chicken, celery, onion, beans, & radishes to a large bowl.
  • Step #5 To make the dressing: in a small bowl, whisk the lemon juice, salt, & pepper together.
  • Step #6 Whisk in the sour cream, mayonnaise, tarragon, & parsley.
  • Step #7 Pour dressing over the chicken mixture; toss carefully to coat thoroughly.
  • Step #8 Cover up & put in the fridge for up to 1 hr.
