Rsc Summer Salad Recipe

Ingredients
  • 6 tsps fresh oregano, sliced .
  • 1 tsp lemon zest, grated .
  • 6 tsps Dijon mustard .
  • 1 c olive oil .
  • 1 c kalamata olives, pitted, sliced .
  • 1/2 c fresh lemon juice .
  • 1 yellow pepper, sliced .
  • 1 lb orzo pasta .
  • 1 pint cherry tomatoes, halved .
  • salt & pepper .
  • 1 red pepper, sliced .
  • 3 (6 oz) cans tuna packed in oil, drained .
  • 1 1/2 c feta cheese, crumbled .
  • 2 tbsps capers .
  • 5 scallions, sliced .
  • 2 tbsps fresh basil, chiffonade

Directions
  • Step #1 cook orzo according to package directions.
  • Step #2 rinse under cold water & drain well, put into a large bowl.
  • Step #3 whisk lemon juice, mustard, oregano, & lemon zest in a small bowl.
  • Step #4 whisk in olive oil.
  • Step #5 add half of this mixture to the orzo.
  • Step #6 to the orzo add peppers, capers, olives, tuna, scallions, feta cheese, & toss well.
  • Step #7 stir in the tomatoes & basil, season this with salt & pepper, add extra dressing to taste.
