Chicken Corn Soup Recipe

Ingredients
  • 2 hard-cooked eggs, sliced
  • 4 quarts water
  • 1/2 c sliced celery
  • 1 (4 lb) chicken
  •  
  • 1 c all-purpose flour
  • 1 pinch salt
  • 1/4 c milk
  • 1 onion, sliced
  • salt & pepper to taste
  • 1 egg
  • 1 (10 oz) package frozen whole kernel corn

Directions
  • Step #1 In a large stock pot cover chicken & onion with water.
  • Step #2 Cook slowly until tender, approximately 1 hr.
  • Step #3 Remove chicken, let cool & remove meat from bones.
  • Step #4 Cut meat into 1 inch pieces, discard skin & bones.
  • Step #5 Cut corn from cobs if using fresh corn.
  • Step #6 Add corn, cut up chicken, celery to stock pot & season this with salt & pepper.
  • Step #7 Simmer soup for 10 mins.
  • Step #8 In a separate bowl make rivels by mixing together flour, egg, salt, & enough milk to form small crumbs.
  • Step #9 Drop rivels into soup & add hard boiled eggs.
  • Step #10 Simmer for 15 mins & serve hot.
