1 c leftover cooked pork (optional) or cooked chicken (optional) or cooked beef, sliced (optional) .
2 garlic cloves, crushed
Directions
Step #1 Place brown rice & water in pot with tight fitting lid - bring to boil, then simmer for 40 mins or until water is absorbed (or use left over brown rice).
Step #2 In large skillet or wok, heat olive oil over med-high heat - add onions & garlic, cook this until soft.
Step #3 Push onions & garlic to the side, add eggs, & cook, stirring constantly.
Step #4 Add vegetables (I usually add more than 1 c) & rice, left over meat(if you choose to), & green onions - continue stirring.
