Cajun Ginger Cake Recipe

Ingredients
  • 1/2 tsp baking soda .
  • 1 tsp salt .
  • 1/2 lb unsalted butter, softened .
  • 1 c dark brown sugar, firmly packed .
  • 2 tbsps fresh ginger, finely grated .
  • 2 eggs, separated .
  • 1/2 c blackstrap molasses .
  • 2 tsps baking powder .
  • 1 tsp cinnamon .
  • powdered sugar .
  • 1/2 c pecans, sliced .
  • 1/2 c sour cream .
  • 2 c all-purpose flour

Directions
  • Step #1 Preheat oven to 350°F.
  • Step #2 Cream together butter & brown sugar.
  • Step #3 Beat in the molasses, the sour cream & the egg yolks.
  • Step #4 Sift together the flour, Baking powder & soda, salt & cinnamon.
  • Step #5 Stir slowly into molasses mixture until well mixed.
  • Step #6 Beat egg whites until stiff but not dry, & fold into batter.
  • Step #7 Fold in nuts.
  • Step #8 Generously butter a 9 x 9 x 2" baking pan.
  • Step #9 Pour in batter & smooth top.
  • Step #10 Bake for 25 to 30 mins or until tester comes out clean.
  • Step #11 Cool briefly in pan, then invert onto rack.
  • Step #12 Sieve powdered sugar on top of cake & enjoy.
