Stir-fried Beef Curry Recipe

Ingredients
  • 2 tbsps chicken stock or water .
  • 1 tbsp shaoxing rice wine or dry sherry .
  • Curry Sauce .
  • 1 1/2 tbsps spring onions, finely sliced .
  • 1 tbsp madras curry paste or Madras curry powder .
  • 1 tbsp shaoxing rice wine or dry sherry .
  • 1 tsp sugar .
  • 1 tbsp dark soy sauce .
  • 1 tbsp light soy sauce .
  • Marinade .
  • 2 tsps cornstarch .
  • 1 tbsp light soy sauce .
  • 8 oz onions, sliced (1 c) .
  • 1 lb lean beef steaks, sliced 2-inches long x 1/4-inch thick .
  • 3 tbsps peanut oil .
  • 2 tsps sesame oil .
  • 2 tbsps garlic, coarsely sliced

Directions
  • Step #1 Place beef in a bowl; add all marinade ingredients & allow to marinate for 20 mins.
  • Step #2 Pre-heat wok until very hot.
  • Step #3 Add the peanut oil, & heat until oil smokes a little; then stir-fry beef until lightly browned (3-5 mins).
  • Step #4 Remove from wok & drain well in a colander set inside a bowl to reserve oil.
  • Step #5 Wipe the wok clean & re-heat over high heat.
  • Step #6 Return 1 tbsp of reserved oil to the wok, & stir-fry the onions & garlic for 1 min.
  • Step #7 Mix in all ingredients listed under sauce, & let mixture simmer for 3 mins.
  • Step #8 Return the beef to the wok & toss to coat thoroughly with sauce.
  • Step #9 Serve as soon as possible.
