Chicken Almond Soo Guy Recipe

Ingredients
  • 2 tsps salt .
  • 2 tsps cornstarch .
  • 4 boneless skinless chicken breasts .
  • 1 c all-purpose flour .
  • 2 tsps ginger .
  • 3 lemon slices .
  • 4 eggs .
  • 8 tbsps reduced sodium soy sauce .
  • Frying Dough .
  • 1 c blanched almonds .
  • 1 tsp sugar .
  • 4 tsps garlic salt .
  • 1/2 c cold water .
  • 1 bunch fresh parsley .
  • 10 tbsps peanut oil .
  • 1/2 c toasted almonds .
  • 1 bunch fresh parsley sprigs .
  • oil (for frying) .
  • 2 tsps salt .
  • 12 oz low fat sweet & sour plum sauce

Directions
  • Step #1 Cut chicken breasts into thin strips.
  • Step #2 Mix soy sauce, ginger, salt & garlic salt.
  • Step #3 Marinate chicken strips in the soy mixture for 30 mins.
  • Step #4 In a frying pan or a wok, heat peanut oil to 375°F.
  • Step #5 Fry first amount of (blanched) almonds until golden.
  • Step #6 Drain well & reduce almonds to a powder.
  • Step #7 Prepare frying dough:.
  • Step #8 Using a fork, beat eggs.
  • Step #9 Still using a fork, salt, beat in cold water, flour, cornstarch & sugar.
  • Step #10 Dough will be a little lumpy.
  • Step #11 Set aside for 10 mins.
  • Step #12 Add powdered almonds to dough mixture.
  • Step #13 Dip marinated chicken strips into frying dough/almonds mixture.
  • Step #14 Drain lightly & fry into very hot oil, until golden brown.
  • Step #15 Arrange chicken strips onto a serving plate garnished with fresh parsley sprigs, lemon slices & toasted almonds.
  • Step #16 Serve, coated with plum sauce.
