No-beans Chili (diabetic) Recipe

Ingredients
  • 1 onion, finely sliced .
  • 1 lb ground beef, lean .
  • 1 (10 oz) can sliced tomatoes & green chilies, mild .
  • 1 (1 1/4 oz) packet taco seasoning, reduced sodium

Directions
  • Step #1 In a sprayed large skillet over med-heat/flame, cook & stir onion until tender.
  • Step #2 Do not brown.
  • Step #3 Remove & set aside.
  • Step #4 In same skillet over med-heat/flame, cook & stir ground beef until it browns.
  • Step #5 Transfer to wire mesh strainer & drain.
  • Step #6 Wipe skillet with paper towels to remove excess fat.
  • Step #7 Return meat & onion to skillet.
  • Step #8 Stir in tomatoes, taco seasoning & 1 to 2 c of water.
  • Step #9 Simmer 25-30 mins for flavors to mix.
