Step #1 Sift the flour, almonds, & sugar & add cocoa powder to darken it.
Step #2 Form a well & add coffee, vanilla extract, butter & orange marmalade.
Step #3 Combine into a dough.
Step #4 Use the dough to form balls the size of a walnut.
Step #5 Put them on a greased cookie sheet & bake them at 375 F until golden.
Step #6 About 15 mins.
Step #7 At this point make the veil: heat the chocolate & sugar over a very gentle flame, stirring constantly, & when the mixture is smooth & creamy remove it from the fire.
Step #8 Stir in the vanilla extract, let it cool slightly, & ice the cookies.
Step #9 Dust the cookies with just a hint of cinnamon & they're ready.
