Kelly's Chicken Fajitas Recipe

Ingredients
  • 2 tsps paprika .
  • 1/2 c lime juice, fresh or concentrate .
  • 1 tbsp cumin .
  • 4 lbs boneless skinless chicken breasts, cut into good-sized strips .
  • 2 tsps salt .
  • 1 yellow bell pepper, julienned .
  • 2/3 c unsweetened pineapple juice .
  • 1 tbsp minced garlic .
  • 1 tsp oregano .
  • 1 c extra virgin olive oil .
  • 2 tsps pepper .
  • 1 onion, cut into small wedges .
  • 2 tbsps chili powder .
  • 1 tsp cumin .
  • 1 green bell pepper, julienned .
  • 1 tsp minced garlic .
  • 1 red bell pepper, julienned

Directions
  • Step #1 Put cut up chicken, peppers & onion in large bowl or ziploc baggie.
  • Step #2 Mix up marinade in medium bowl, & pour over chicken mixture, tossing/mixing to coat all thoroughly.
  • Step #3 Marinate in fridge for 4-6 hrs.
  • Step #4 Drain off excess marinade.
  • Step #5 In one (or more) medium-hot frying pans, add a little olive oil, then add chicken mixture.
  • Step #6 Stir-fry til chicken is done.
  • Step #7 Should take only about 8-12 mins depending on how big you cut your chicken strips.
  • Step #8 Warm flour tortillas in microwave (about 30 seconds on high, 3-4 at a time) or in oven wrapped in foil wrap.
  • Step #9 **Serve with sour cream, picante sauce, sliced tomato, guacamole, shredded lettuce & shredded cheese.
  • Step #10 ***Tossed salad, refried beans/dip, chips, spanish or mexican rice, spicy cornbread, etc.
  • Step #11 , are nice accompaniments.
  • Step #12 ****This recipe can easily be halved.
