Chicken Francais Recipe

Ingredients
  • 2 tbsps fresh lemon juice .
  • 1/4 c fresh parmesan cheese, grated .
  • cooking spray .
  • 1/8 tsp hot pepper sauce .
  • 1/4 c dry white wine .
  • 8 boneless skinless chicken breast halves .
  • 1/4 c dry white wine .
  • 1/4 c all-purpose flour .
  • 3 garlic cloves, minced .
  • 3 tbsps fresh lemon juice .
  • 1 tbsp olive oil, divided .
  • 1/4 c egg substitute .
  • 1/4 tsp salt .
  • 2 tbsps butter .
  • 1/4 c fresh parsley, sliced

Directions
  • Step #1 Combine first 8 ingredients in a shallow dish.
  • Step #2 Place each chicken breast half between 2 sheets of plastic wrap, & lb to 1/4 inch thickness using a meat mallet or rolling pin.
  • Step #3 Dredge chicken in flour, & dip in the egg mixture.
  • Step #4 Heat 1 1/2 tsps oil In a large-ish nonstick skillet coated with cooking spray over med-heat/flame.
  • Step #5 Add 4 chicken breat halves, cook 4 mins on each side or until done.
  • Step #6 Remove chicken from pan, keep warm.
  • Step #7 Wipe the drippings for pan with a paper towel.
  • Step #8 Repeat the procedure with 1 1/2 tsps oil & the remaining chicken.
  • Step #9 Melt butter in pan, add 1/4 c wine & 3 tbsps of juice.
  • Step #10 Bring to a boil cook for 10 seconds.
  • Step #11 Serve as soon as possible over chicken.
